Ingredients

  • 1.2 kg ripe apricots
  • 600 g sugar
  • 3 tbsp mild floral honey
  • Juice of 1 lemon
  • 2–3 sprigs fresh lemon thyme

Instructions

1. Prepare the Apricots

Wash, halve, and remove pits. Leave skins on for flavor and natural thickness.

2. Macerate Gently

Combine apricots, sugar, honey, and lemon juice. Cover and rest 2–4 hours until juices release.

Transfer mixture to a wide pot. Add lemon thyme. Simmer on medium heat 25–35 minutes, stirring gently and skimming foam.
