Ingredients

  • 1 wheel brie cheese (8–12 oz / 225–350 g)
  • 1 sheet puff pastry, thawed
  • 4–5 tbsp cranberry jam or cranberry sauce (thick)
  • ½ cup mixed nuts, roughly chopped (walnuts, pecans, or almonds)
  • 1 egg, beaten (for egg wash)
  • 1–2 tbsp honey or maple syrup (optional, for finishing)
  • Fresh rosemary or thyme, for garnish (optional)

Instructions

1. Preheat the Oven

Preheat oven to 400°F / 200°C (180°C fan). Line a baking sheet with parchment paper.

2. Prepare the Brie

If desired, trim the top rind off the brie for extra meltiness. Leave the sides intact.

3. Assemble

  • Roll out the puff pastry on a lightly floured surface
  • Place the brie in the center
  • Spread cranberry jam evenly over the top
  • Sprinkle chopped nuts over the jam

4. Wrap & Seal

  • Fold pastry up and over the brie, sealing completely
  • Trim excess dough and pinch seams
  • Place seam-side down on the baking sheet

5. Egg Wash & Bake

  • Brush pastry all over with beaten egg
  • Bake 20–25 minutes until puffed and deep golden

6. Rest & Serve

Rest 5–10 minutes before cutting. Drizzle with honey and garnish with herbs if desired.
